- In a saucepan, whisk together the sugar, cocoa powder, cornstarch, and milk over medium heat.
- Cook the mixture, stirring constantly until it thickens and bubbles, about 5-7 minutes.
- Remove from heat and stir in the heavy cream, vanilla extract, Baileys Irish Cream, and peppermint extract.
- Pour the pudding into individual serving glasses or cups.
- Refrigerate the parfaits for at least 2 hours.
- Before serving, add your garnish of chocolate shavings or crushed mint candies on top.
Notes
Make ahead: These parfaits can be made a day in advance and stored covered in the fridge. If the pudding looks lumpy, blend or whisk it again for a smooth finish. Add different flavorings for variation.
