Ingredients
  

For the Pudding
  • 1 cup heavy cream
  • 1 cup milk Whole milk recommended for creaminess.
  • ½ cup granulated sugar
  • cup unsweetened cocoa powder
  • 2 tablespoons cornstarch Used for thickening the pudding.
  • 1 teaspoon vanilla extract
  • ½ cup Baileys Irish Cream Can be substituted with chocolate or mint-flavored syrup for a non-alcoholic version.
  • ¼ teaspoon peppermint extract
For Garnish
  • Chocolate shavings or crushed mint candies Use for decorative topping.

Preparation
  1. In a saucepan, whisk together the sugar, cocoa powder, cornstarch, and milk over medium heat.
  2. Cook the mixture, stirring constantly until it thickens and bubbles, about 5-7 minutes.
  3. Remove from heat and stir in the heavy cream, vanilla extract, Baileys Irish Cream, and peppermint extract.
  4. Pour the pudding into individual serving glasses or cups.
  5. Refrigerate the parfaits for at least 2 hours.
  6. Before serving, add your garnish of chocolate shavings or crushed mint candies on top.

Notes

Make ahead: These parfaits can be made a day in advance and stored covered in the fridge. If the pudding looks lumpy, blend or whisk it again for a smooth finish. Add different flavorings for variation.
