  • 1 wheel (8 oz) Brie cheese The star of the show
  • 1 cup cranberry sauce Store-bought or homemade
  • 1/2 cup chopped pecans Provides delightful crunch
  • 1 tablespoon honey Optional for added sweetness
  • 1 tablespoon fresh thyme or rosemary Optional to elevate the flavor
  • 1 sheet puff pastry Optional for an extra flaky layer
  • as needed crackers or sliced baguette For serving

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. If you’re not using the puff pastry, score the top of the brie in a crosshatch pattern.
  3. If using puff pastry, roll it out and place the brie in the center.
  4. Spread cranberry sauce over the top and sprinkle with chopped pecans. Drizzle with honey and sprinkle with fresh herbs if desired.
  5. If using puff pastry, fold it around the cheese, covering it completely. Brush the top with egg wash.
Baking
  1. Place the brie on a baking sheet lined with parchment paper.
  2. Bake for about 15-20 minutes, until the cheese is gooey and the pastry is golden brown, if using.
Serving
  1. Remove from the oven and let it sit for a couple of minutes before serving.
  2. Serve with crackers or slices of baguette.

Notes

You can prep the brie up to a day in advance and store it in the fridge. Feel free to customize the nut topping with walnuts or almonds. Embrace the messiness of melted cheese for a great cheese board moment!
