- 3 ripe bananas
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup chopped pecans
- 1/2 cup unsalted butter (for frosting)
- 1 cup brown sugar
- 1/4 cup heavy cream
- 2 cups powdered sugar
- 1 teaspoon vanilla extract (for frosting)
- Chopped pecans for sprinkling on top
Instructions
- Preheat your oven to 350°F (175°C).
- Mash the ripe bananas until smooth.
- Cream the softened butter and granulated sugar together until fluffy.
- Mix in the eggs and vanilla extract, then fold in the mashed bananas.
- Combine the flour, baking soda, and salt in a separate bowl. Gradually add to the banana mixture.
- Add the chopped pecans.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Make the caramel frosting by melting butter, adding brown sugar and heavy cream, boiling, then whisking in powdered sugar and vanilla.
- Frost between the cakes and cover the top and sides.
- Decorate with chopped pecans on top.
Notes
Frosting may have a rustic texture for charm. Cake can be made a day ahead and tastes even better as flavors meld.
