- 2 pounds beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 cups carrots, sliced
- 2 cups potatoes, diced
- 2 cups celery, chopped
- 1 cup peas (fresh or frozen)
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Sear the beef: In a large pot or Dutch oven, heat olive oil over medium-high heat. Once the oil is hot, add the beef cubes, seasoning them with a bit of salt and pepper. Sear until browned on all sides (about 8-10 minutes).
- Sauté the aromatics: Once the beef is perfectly browned, remove it from the pot and set it aside. In the same pot, add chopped onions and garlic. Sauté until the onions are translucent (about 3-4 minutes).
- Add the good stuff: Return the beef to the pot with the onions and garlic, then stir in the tomato paste, thyme, and bay leaf.
- Pour in the broth: Slowly add beef broth, scraping the bottom of the pot to pick up any delicious bits stuck to the bottom.
- Toss in the veggies: Add your carrots, potatoes, and celery. Bring the mixture to a boil, then reduce the heat and cover, letting it cook for about 1.5 to 2 hours.
- Final touches: When the beef is tender and falling apart, stir in the peas and let them cook for another 5-10 minutes.
- Serve & enjoy: Ladle the beef stew into bowls and serve hot.
