  • 1 medium beet, peeled and grated
  • 1 orange, zested and juiced

  • 1/4 cup of sea salt
  • 1/4 cup of granulated sugar
  • Freshly cracked black pepper to taste

Instructions

  1. Prepare the cure: In a bowl, mix the grated beet, orange zest, dill, sea salt, and sugar until well combined.
  2. Apply the cure: Place the salmon skin-side down in a shallow dish. Evenly distribute the beet mixture over the salmon.
