Ingredients
Scale
- 1 pound of fresh salmon fillet, skin on
- 1 medium beet, peeled and grated
- 1 orange, zested and juiced
- 1/2 cup of fresh dill, chopped
- 1/4 cup of sea salt
- 1/4 cup of granulated sugar
- Freshly cracked black pepper to taste
Instructions
- Prepare the Cure: In a bowl, mix the grated beet, orange zest, dill, sea salt, and sugar until well combined.
- Apply the Cure: Place the salmon skin-side down in a shallow dish. Evenly distribute the beet mixture over the salmon, covering it entirely.
- Wrap It Up: Cover the dish tightly with plastic wrap and let it cure in the refrigerator for at least 24 hours.
- Rinse and Dry: After the curing time, remove the salmon from the fridge and rinse off the cure under cold water. Pat it dry with paper towels.
- Slice and Enjoy: Using a sharp knife, slice the salmon thinly and serve with crackers, on a salad, or in a sandwich.
Notes
Select high-quality salmon for the best flavor. Don’t skimp on the curing time for optimal flavor development.
