Description

A vibrant and flavorful cured salmon dish featuring beets, orange, and dill, perfect for any special occasion.

Ingredients

Scale
  • 1 pound of fresh salmon fillet, skin on
  • 1 medium beet, peeled and grated
  • 1 orange, zested and juiced
  • 1/2 cup of fresh dill, chopped
  • 1/4 cup of sea salt
  • 1/4 cup of granulated sugar
  • Freshly cracked black pepper to taste

Instructions

  1. Prepare the Cure: In a bowl, mix the grated beet, orange zest, dill, sea salt, and sugar until well combined.
  2. Apply the Cure: Place the salmon skin-side down in a shallow dish. Evenly distribute the beet mixture over the salmon, covering it entirely.
  3. Wrap It Up: Cover the dish tightly with plastic wrap and let it cure in the refrigerator for at least 24 hours.
  4. Rinse and Dry: After the curing time, remove the salmon from the fridge and rinse off the cure under cold water. Pat it dry with paper towels.
  5. Slice and Enjoy: Using a sharp knife, slice the salmon thinly and serve with crackers, on a salad, or in a sandwich.

Notes

Select high-quality salmon for the best flavor. Don’t skimp on the curing time for optimal flavor development.
