- 1 ½ cups graham cracker crumbs
- ¾ cup unsalted butter, melted
- ½ cup sugar
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- ½ teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 cups fresh peaches, sliced
- 1 cup mixed berries (like strawberries, raspberries, and blueberries)
- Optional: mint leaves for garnish
Instructions
- Combine the graham cracker crumbs, melted butter, and sugar in a medium bowl and press into the bottom of a 9-inch springform pan.
- Beat the softened cream cheese until creamy, then gradually add powdered sugar and vanilla extract until smooth.
- Whip the heavy cream until stiff peaks form and gently fold into the cream cheese mixture.
- Spoon the cream cheese filling into the prepared crust and smooth with a spatula; chill for at least 4 hours or overnight.
- Remove the sides of the springform pan and top the cheesecake with sliced peaches and mixed berries.
- Serve with a sprig of mint for an extra touch.
Notes
This cheesecake can be made ahead of time; it gets better as it sits. Use fresh fruits for best flavor, but frozen fruits can be used if thawed and drained.
