A delightful and easy dessert featuring layers of creamy mascarpone, fluffy sponge cake, and fresh berries.
Ingredients

- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup brewed coffee, cooled
- 1 package ladyfinger cookies
- Fresh mint leaves for garnish (optional)
Instructions
- Whip the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract in a mixing bowl until thick peaks form.
- Brew your coffee and allow it to cool. Optionally, add coffee liqueur. Dip each ladyfinger quickly into the coffee.
- Layer the soaked ladyfingers at the bottom of a trifle dish, followed by the mascarpone mixture and mixed berries. Repeat layers.
- Chill in the refrigerator for at least an hour.
- Garnish with fresh berries and mint before serving.
Notes
Feel free to experiment with different types of berries or use cream cheese mixed with sour cream as a mascarpone substitute.
