- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup sugar
- 3 (8 oz) packages of cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 cup blackberries
- 1 cup raspberries
- ¼ cup sugar
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 325°F (163°C).
- Combine the graham cracker crumbs, melted butter, and sugar in a bowl.
- Press this mixture firmly into the bottom of a 9-inch springform pan. Bake for about 10 minutes, then let it cool.
- Cook the blackberries, raspberries, sugar, and lemon juice over medium heat until thickened (about 5-7 minutes). Let it cool.
- Beat the cream cheese until smooth. Gradually add sugar and vanilla extract, then mix in the eggs one at a time. Stir in the sour cream.
- Pour the cheesecake filling over the cooled crust. Drizzle the berry mixture on top and swirl with a knife.
- Bake for about 55-60 minutes, until the outer edges are set. Let it cool for 15 minutes, then refrigerate for at least 4 hours.
- Slice and serve to enjoy!
Notes
For a flawless cheesecake, bake it in a water bath. Use Greek yogurt as a substitute for sour cream if desired.
