Description

A luscious cheesecake with a blackberry raspberry swirl, perfect for any occasion.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup sugar
  • 3 (8 oz) packages of cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup blackberries
  • 1 cup raspberries
  • ¼ cup sugar
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Combine the graham cracker crumbs, melted butter, and sugar in a bowl.
  3. Press this mixture firmly into the bottom of a 9-inch springform pan. Bake for about 10 minutes, then let it cool.
  4. Cook the blackberries, raspberries, sugar, and lemon juice over medium heat until thickened (about 5-7 minutes). Let it cool.
  5. Beat the cream cheese until smooth. Gradually add sugar and vanilla extract, then mix in the eggs one at a time. Stir in the sour cream.
  6. Pour the cheesecake filling over the cooled crust. Drizzle the berry mixture on top and swirl with a knife.
  7. Bake for about 55-60 minutes, until the outer edges are set. Let it cool for 15 minutes, then refrigerate for at least 4 hours.
  8. Slice and serve to enjoy!

Notes

For a flawless cheesecake, bake it in a water bath. Use Greek yogurt as a substitute for sour cream if desired.
