A quick and flavorful dish featuring Cajun salmon, garlic butter prawns, and roasted broccoli, perfect for weeknight dinners.

- 2 salmon fillets
- 8 oz prawns, peeled and deveined
- 1 tablespoon Cajun seasoning
- 2 tablespoons garlic, minced
- 3 tablespoons butter
- Salt and pepper, to taste
- 1 large head of broccoli, cut into florets
- 2 tablespoons olive oil
- Optional: Lemon juice for a fresh finish
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the broccoli florets with olive oil, salt, and pepper on a baking sheet.
- Spread them out in a single layer and roast in the preheated oven for about 15-20 minutes until tender and slightly crispy.
- Heat 1 tablespoon of butter in a large skillet over medium heat. Season the salmon fillets with Cajun seasoning, salt, and pepper.
- Place the salmon fillets skin-side down in the skillet, cooking for about 4-5 minutes on each side until cooked through and flaky.
- In the same skillet, add another tablespoon of butter and the minced garlic. Once fragrant, toss in the prawns.
- Cook for about 3-4 minutes, or until they turn pink and opaque.
- Once the salmon and prawns are off the heat, plate them alongside the roasted broccoli. A squeeze of fresh lemon juice over everything adds brightness.
Notes
For extra heat, add more Cajun seasoning to the prawns. Substitute broccoli with asparagus or bell peppers as desired.
