Description

A quick and flavorful dish featuring Cajun salmon, garlic butter prawns, and roasted broccoli, perfect for weeknight dinners.


Ingredients

  • 2 salmon fillets
  • 8 oz prawns, peeled and deveined
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons garlic, minced
  • 3 tablespoons butter
  • Salt and pepper, to taste
  • 1 large head of broccoli, cut into florets
  • 2 tablespoons olive oil
  • Optional: Lemon juice for a fresh finish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the broccoli florets with olive oil, salt, and pepper on a baking sheet.
  3. Spread them out in a single layer and roast in the preheated oven for about 15-20 minutes until tender and slightly crispy.
  4. Heat 1 tablespoon of butter in a large skillet over medium heat. Season the salmon fillets with Cajun seasoning, salt, and pepper.
  5. Place the salmon fillets skin-side down in the skillet, cooking for about 4-5 minutes on each side until cooked through and flaky.
  6. In the same skillet, add another tablespoon of butter and the minced garlic. Once fragrant, toss in the prawns.
  7. Cook for about 3-4 minutes, or until they turn pink and opaque.
  8. Once the salmon and prawns are off the heat, plate them alongside the roasted broccoli. A squeeze of fresh lemon juice over everything adds brightness.

Notes

For extra heat, add more Cajun seasoning to the prawns. Substitute broccoli with asparagus or bell peppers as desired.
