Instructions
- Prep the scallops: Make sure your scallops are patted dry with a paper towel.
- Season: Sprinkle the scallops generously with salt and pepper, then let them sit at room temperature for about 15 minutes.
- Heat the pan: Place a large, heavy-bottomed skillet over medium-high heat and add olive oil.
- Sear the scallops: Carefully place the scallops in the skillet and sear for about 2 minutes on each side until golden brown.
- Make the sauce: Add the butter and garlic to the pan, melt, then squeeze in the lemon juice and add lemon zest along with fresh herbs.
- Plate and enjoy: Serve the scallops drizzled with the lemon herb butter.
