  • ½ cup heavy cream
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the dry ingredients in a large mixing bowl: flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, oil, and vanilla to the dry mix. Mix until combined, being careful not to overmix.
  4. Stir in the boiling water slowly to ensure the batter remains smooth.
  5. Pour the batter evenly into two greased 9-inch round cake pans. Bake for 30-35 minutes, or until a toothpick comes out clean. Let cool for 10 minutes before transferring to a wire rack.
  6. Prepare the frosting by beating softened butter until creamy, then gradually add powdered sugar and cocoa powder, alternating with heavy cream and vanilla until fluffy.
  7. Assemble the cake by placing one layer on a serving platter. Spread half of the cherry filling over the first layer, top with frosting, then place the second cake layer on top and repeat the filling and frosting.
  8. Decorate with extra cherries or a drizzle of chocolate sauce as desired.

Notes
