Instructions
- Preheat your oven to 350°F (175°C).
- Mix the dry ingredients in a large mixing bowl: flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, milk, oil, and vanilla to the dry mix. Mix until combined, being careful not to overmix.
- Stir in the boiling water slowly to ensure the batter remains smooth.
- Pour the batter evenly into two greased 9-inch round cake pans. Bake for 30-35 minutes, or until a toothpick comes out clean. Let cool for 10 minutes before transferring to a wire rack.
- Prepare the frosting by beating softened butter until creamy, then gradually add powdered sugar and cocoa powder, alternating with heavy cream and vanilla until fluffy.
- Assemble the cake by placing one layer on a serving platter. Spread half of the cherry filling over the first layer, top with frosting, then place the second cake layer on top and repeat the filling and frosting.
- Decorate with extra cherries or a drizzle of chocolate sauce as desired.
Notes
Allow the cakes to cool completely before frosting to prevent a frosting disaster. Consider adding chocolate chips for extra flavor or doubling the recipe for a two-tier cake.
