Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix the dry ingredients: In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the wet ingredients: Add eggs, milk, oil, and vanilla. Mix on medium speed for 2 minutes.
  4. Incorporate boiling water: Carefully stir in boiling water until combined.
  5. Bake the cakes: Pour batter into prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  6. Cool the cakes: Let cool in pans for 10 minutes, then transfer to a rack to cool completely.
  7. Whip the creamy vanilla filling: Beat heavy cream, powdered sugar, and vanilla until stiff peaks form.
  8. Assemble the cake: Place one layer on a plate, spread with filling, then top with second layer. Frost if desired.
