  • ½ cup unsalted butter, melted
  • ¼ cup sugar
  • For the filling:
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1 cup heavy cream
  • ½ cup cream cheese, softened
  • 1 teaspoon vanilla extract
  • For the chocolate ganache:
  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy cream

Instructions

  1. Make the crust by combining graham cracker crumbs, melted butter, and sugar until sand-like. Press into a 9-inch pie pan and bake at 350°F (175°C) for 10 minutes. Let cool.
  2. Prepare the filling by beating cream cheese until smooth, then adding peanut butter and powdered sugar. In a separate bowl, whip heavy cream and vanilla until stiff peaks form, then fold into peanut butter mixture. Pour into crust.
  3. Warm heavy cream over medium heat, then add chocolate chips. Stir until melted and smooth. Pour ganache over filling and refrigerate for at least 4 hours.

Notes

For added texture, try mixing in chopped nuts or crushed toffee bits into the crust.
