Description

Churro Cheesecake is the perfect recipe for sweet bliss, blending creamy cheesecake and crunchy churro crust.


Ingredients

  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/4 cup granulated sugar (for topping)
  • 1 teaspoon cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Trust me, this step is non-negotiable!
  2. Grease a springform pan.
  3. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and mix until combined.
  4. Incorporate the flour, cinnamon, and salt until a soft dough forms. Press this dough into the bottom of your greased springform pan.
  5. Mix the cream cheese with granulated sugar until smooth. Scrape down the sides to avoid any chunky surprises.
  6. Beat in the sour cream, then add the eggs one at a time, mixing well after each addition. Stir in the vanilla and flour until blended.
  7. Pour the cheesecake mixture over your churro crust, smoothing the top with a spatula.
  8. Bake in your preheated oven for 45-50 minutes.
  9. Turn the oven off, crack the door open, and let the cheesecake cool slowly.
  10. Mix together the granulated sugar and cinnamon in a small bowl. Sprinkle this mix on top of the cooled cheesecake.
  11. Cover and refrigerate your churro cheesecake for at least 4 hours or overnight for best results.

Notes

If you find your cheesecake has some lumps, a good mix should smooth it out, but those lumps add character!
