Description

A cozy, comforting dish featuring tender beef, sweet apples, and savory onions simmered in apple cider.


Ingredients

  • 2 pounds beef chuck roast, cut into large chunks
  • 2 tablespoons olive oil
  • 2 onions, sliced
  • 3 cups apple cider
  • 2 apples, cored and cut into wedges
  • 3 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Sear the beef: In a large pot, heat the olive oil over medium-high heat. Season beef with salt and pepper; brown in batches for 3-4 minutes per side and transfer to a plate.
  2. Sauté the onions: In the same pot, add onions and cook over medium heat for 5-7 minutes until translucent.
  3. Add apples and garlic: Toss in apple wedges and minced garlic; cook for 2 minutes.
  4. Pour in the cider: Slowly add the cider, scraping up brown bits from the bottom of the pot.
  5. Bring back the beef: Add the browned beef back into the pot with thyme and bay leaves. Simmer gently.
  6. Cover and cook: Reduce heat to low, cover, and simmer for 2 to 2.5 hours.
  7. Serve and enjoy: Once beef is fork-tender, serve with crusty bread or over mashed potatoes.

Notes

This dish is even better the next day! For a thicker gravy, stir in cornstarch mixed with water after removing the beef.
