Ingredients

- 2 pounds beef chuck roast, cut into large chunks
- 2 tablespoons olive oil
- 2 onions, sliced
- 3 cups apple cider
- 2 apples, cored and cut into wedges
- 3 cloves garlic, minced
- 1 tablespoon fresh thyme leaves
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Sear the beef: In a large pot, heat the olive oil over medium-high heat. Season beef with salt and pepper; brown in batches for 3-4 minutes per side and transfer to a plate.
- Sauté the onions: In the same pot, add onions and cook over medium heat for 5-7 minutes until translucent.
- Add apples and garlic: Toss in apple wedges and minced garlic; cook for 2 minutes.
- Pour in the cider: Slowly add the cider, scraping up brown bits from the bottom of the pot.
- Bring back the beef: Add the browned beef back into the pot with thyme and bay leaves. Simmer gently.
- Cover and cook: Reduce heat to low, cover, and simmer for 2 to 2.5 hours.
- Serve and enjoy: Once beef is fork-tender, serve with crusty bread or over mashed potatoes.
Notes
This dish is even better the next day! For a thicker gravy, stir in cornstarch mixed with water after removing the beef.
