Description

A vibrant and crunchy pea salad, perfect for summer gatherings or as a side dish for barbecues.


Ingredients

  • 2 cups green peas (frozen or fresh)
  • 1/2 cup red bell pepper, finely chopped
  • 1/2 cup celery, finely chopped
  • 1/2 cup green onions, sliced
  • 1 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon sugar
  • Salt and pepper to taste

Instructions

  1. Cook the peas: If you’re using fresh peas, boil them for about 2 minutes until they’re bright green and tender. If you’re using frozen peas, just give them a quick rinse in warm water. Either way, once they’re cooked, drain and let them cool.
  2. Mix it up: In a large bowl, combine the cooled peas, red bell pepper, celery, and green onions.
  3. Make the dressing: In a separate bowl, whisk together the mayonnaise, apple cider vinegar, and sugar. Season with salt and pepper to taste.
  4. Fold in the dressing: Gently combine the dressing with the pea mixture until everything is well-coated.
  5. Chill and serve: Cover the salad and refrigerate for at least an hour before serving.

Notes

Make it ahead for best flavor. Can substitute peas with chickpeas or black-eyed peas.
