A quick and effortless appetizer featuring creamy burrata, fresh tomatoes, and fragrant basil, perfect for summer gatherings.


Ingredients

  • 1 loaf of crusty Italian bread (baguette alternative)
  • 1 ball of fresh burrata cheese
  • 2 cups of ripe tomatoes, diced
  • 1/4 cup of fresh basil leaves, torn
  • 2 tablespoons of extra virgin olive oil
  • 1 tablespoon of balsamic glaze
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Slice the Italian bread into 1/2-inch thick pieces. Arrange them on a baking sheet and brush with olive oil. Pop them in the oven for about 5-7 minutes, or until golden and crispy.
  2. Combine diced tomatoes, torn basil leaves, olive oil, salt, and pepper in a medium bowl. Stir gently.
  3. Assemble by placing a scoop of tomato mixture on each piece of toasted bread. Pull apart the burrata and place on top. Drizzle with balsamic glaze.
  4. Serve on a platter and enjoy compliments!

Notes

Feel free to add toppings like avocado or chili flakes. Balsamic glaze can be replaced by homemade version if desired.
