- 1 pound Italian sausage (sweet or spicy)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth (or vegetable broth)
- 2 large potatoes, diced (about 4 cups)
- 1 cup heavy cream
- 2 cups kale, chopped (optional)
- Salt and pepper, to taste
- Olive oil, for cooking
- Grated parmesan cheese, for serving
Instructions
- Sauté the sausage: In a large pot, heat a drizzle of olive oil over medium heat. Add the Italian sausage, breaking it apart as it cooks for 5-7 minutes.
- Add onions and garlic: Toss in the diced onion and minced garlic. Sauté for another 3-4 minutes until the onion is translucent.
- Pour in the broth: Add chicken or vegetable broth to the pot and scrape up any delicious bits stuck to the bottom.
- Add the potatoes: Toss in the diced potatoes and bring to a gentle boil. Reduce heat and let simmer for 15-20 minutes, until fork-tender.
- Stir in the cream: Stir in heavy cream and kale (if using). Simmer for another 5-10 minutes until the soup thickens.
- Season to taste: Add salt and pepper to taste.
- Serve and enjoy: Ladle into bowls and sprinkle with parmesan cheese. Serve with crusty bread.
Notes
Make ahead and store in the fridge for 3-4 days. Can be frozen for up to three months. For a vegetarian option, use plant-based sausage.
