Ingredients

  • 2 tablespoons olive oil (or butter)
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 teaspoon dried thyme
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley or chives for garnish

Instructions

  1. Sauté the olive oil in a large pot over medium heat. Add the chopped onion and cook until soft and translucent, about 4-5 minutes.
  2. Add the minced garlic and sliced mushrooms. Stir until the mushrooms are tender and moisture is released, about 7-8 minutes.
  3. Sprinkle in the dried thyme, along with a pinch of salt and pepper. Stir to combine.
  4. Pour in the broth and bring to a simmer. Let bubble for about 15 minutes.
  5. Remove from heat and blend until smooth using an immersion blender. Leave some mushroom pieces for texture if desired.
  6. Return to low heat and stir in the heavy cream. Warm through for about 5 minutes, adjusting seasoning as needed.
  7. Ladle into bowls and garnish with fresh parsley or chives.

Notes

You can experiment with different mushroom varieties and substitute heavy cream with half-and-half or coconut milk for a lighter version.
