Ingredients

- 2 tablespoons olive oil (or butter)
- 1 small onion, chopped
- 3 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 teaspoon dried thyme
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley or chives for garnish
Instructions
- Sauté the olive oil in a large pot over medium heat. Add the chopped onion and cook until soft and translucent, about 4-5 minutes.
- Add the minced garlic and sliced mushrooms. Stir until the mushrooms are tender and moisture is released, about 7-8 minutes.
- Sprinkle in the dried thyme, along with a pinch of salt and pepper. Stir to combine.
- Pour in the broth and bring to a simmer. Let bubble for about 15 minutes.
- Remove from heat and blend until smooth using an immersion blender. Leave some mushroom pieces for texture if desired.
- Return to low heat and stir in the heavy cream. Warm through for about 5 minutes, adjusting seasoning as needed.
- Ladle into bowls and garnish with fresh parsley or chives.
Notes
You can experiment with different mushroom varieties and substitute heavy cream with half-and-half or coconut milk for a lighter version.
