- 4 salmon fillets
- 2 cups fresh spinach, chopped
- 1 cup cream cheese, softened
- 1/2 cup feta cheese, crumbled
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Lemon wedges, for serving
Instructions
- Preheat your oven to 375°F (190°C). In a skillet, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant, then toss in your chopped spinach. Cook until wilted, about 3 minutes. Once that’s done, remove it from heat and let it cool slightly.
- In a bowl, combine the sautéed spinach, softened cream cheese, feta cheese, Parmesan cheese, and season with salt and pepper. Mix until it’s all creamy and well-combined.
- Take your salmon fillets and slice a pocket into each one, being careful not to slice all the way through. Spoon the creamy spinach filling into each pocket.
- Place the stuffed fillets on a baking sheet and bake them in your preheated oven for about 20-25 minutes or until the salmon is opaque and flakes easily with a fork.
- Serve the creamy stuffed salmon with lemon wedges on the side.
Notes
Ensure cream cheese is softened for a smooth filling. Try swapping spinach for arugula for a peppery twist.
