- 4 cups chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 cup heavy cream (or half-and-half)
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- Sizzle and sauté: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until soft and translucent, about 5 minutes. Throw in the minced garlic and cook for an additional minute.
- Add the bite-sized chicken pieces to the pot and allow them to brown for about 5-7 minutes until golden and mostly cooked through.
- Stir in the white beans, green chiles, chicken broth, cumin, chili powder, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15-20 minutes.
- Pour in the heavy cream. Stir well and let it heat through for another 5 minutes, adjusting seasonings if needed.
- Ladle the chili into bowls, garnish with fresh cilantro, and add a squeeze of juicy lime. Serve with crushed tortilla chips if desired.
Notes
For a quicker version, use rotisserie chicken. You can also add diced jalapeños or hot sauce for extra spice.
