Instructions
- Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans with butter and parchment paper.
- Cream the butter and granulated sugar until light and fluffy, about 3-5 minutes. Add the eggs one at a time, mixing well after each addition. Mix in the vanilla extract and cream.
- Whisk together the flour, baking powder, and salt in another bowl. Gradually add to the wet ingredients and stir until just combined.
- Divide the batter between the prepared cake pans and bake for 25-30 minutes, or until a toothpick comes out clean. Cool in the pans for 10 minutes before transferring to a wire rack.
- Combine the heavy cream, powdered sugar, and vanilla extract in a mixing bowl for the topping, whisk until smooth, and spread over the cooled cakes.
- Sprinkle an even layer of granulated sugar over the topping and caramelize using a kitchen torch or broiler until golden brown.
