- ½ cup unsalted butter, melted
- ⅓ cup granulated sugar
- 2 cups fresh raspberries
- ¼ cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 cup dark chocolate chips
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- Preheat the oven to 350°F (175°C).
- Mix graham cracker crumbs, melted butter, and granulated sugar in a bowl until combined. Press into a greased 9×9-inch baking dish and Bake for about 10 minutes until lightly golden.
- Combine raspberries, sugar, cornstarch, and lemon juice in a saucepan over medium heat. Stir until the raspberries break down and the mixture thickens, about 4-5 minutes.
- Spread the raspberry mixture over the cooled pie crust.
- Heat heavy cream over medium heat until just steaming. Add dark chocolate chips, vanilla extract, and salt, then Stir until smooth.
- Pour the chocolate mixture over the raspberry layer.
- Cool at room temperature for 30 minutes, then Chill in the refrigerator for at least 2 hours.
- Slice into squares or bars and Serve.
