- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ cup unsalted butter, melted
- 2 (8 oz) packages of cream cheese, softened
- ¾ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup sour cream
- 2 cups fresh or frozen blueberries
- ½ cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 325°F (163°C).
- Prepare the crust: In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until it resembles wet sand. Press firmly into the bottom of a 9-inch springform pan.
- Bake the crust for about 10 minutes, or until lightly golden.
- Make the filling: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add sugar and vanilla, mixing until well blended.
- Add eggs one at a time, mixing just until incorporated. Stir in sour cream until smooth.
- Pour the filling onto the cooled crust and jiggle to release air bubbles.
- Bake for 45-50 minutes, until the center is set but still jiggles slightly. Cool completely on a wire rack, then chill for at least 4 hours.
- Prepare the topping in a saucepan over medium heat, combining blueberries, sugar, cornstarch, and lemon juice. Cook until blueberries burst and mixture thickens. Let cool.
- Spread the blueberry topping over the chilled cheesecake.
- Slice, serve, and enjoy!
Notes
For a no-bake version, combine filling ingredients (excluding eggs) and refrigerate until set. Swap blueberries for other berries if desired.
