Description

This Easy Blueberry Cheesecake is a deliciously simple treat that combines the tartness of blueberries with the richness of cheesecake, perfect for any occasion.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 2 (8 oz) packages of cream cheese, softened
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup sour cream
  • 2 cups fresh or frozen blueberries
  • ½ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Prepare the crust: In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until it resembles wet sand. Press firmly into the bottom of a 9-inch springform pan.
  3. Bake the crust for about 10 minutes, or until lightly golden.
  4. Make the filling: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add sugar and vanilla, mixing until well blended.
  5. Add eggs one at a time, mixing just until incorporated. Stir in sour cream until smooth.
  6. Pour the filling onto the cooled crust and jiggle to release air bubbles.
  7. Bake for 45-50 minutes, until the center is set but still jiggles slightly. Cool completely on a wire rack, then chill for at least 4 hours.
  8. Prepare the topping in a saucepan over medium heat, combining blueberries, sugar, cornstarch, and lemon juice. Cook until blueberries burst and mixture thickens. Let cool.
  9. Spread the blueberry topping over the chilled cheesecake.
  10. Slice, serve, and enjoy!

Notes

For a no-bake version, combine filling ingredients (excluding eggs) and refrigerate until set. Swap blueberries for other berries if desired.
