  • 1/4 cup granulated sugar
  • 1/2 cup melted butter
  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 cup fresh blueberries (or frozen, if that’s what you have)
  • 1 cup blueberries (for topping)
  • 1 tablespoon sugar (for topping)
  • 1 tablespoon lemon juice (for topping)

Instructions

  1. Preheat your oven to 325°F (160°C) and prepare a 9-inch springform pan.
  2. Combine the crushed graham crackers, 1/4 cup of sugar, and melted butter in a bowl. Press the mixture into the bottom of the prepared pan.
  3. Beat the cream cheese until smooth, then gradually add 1 cup of sugar. Add the eggs one at a time, mixing well, then incorporate the vanilla, sour cream, and blueberries gently.
  4. Pour the filling over the crust and bake for 50-60 minutes until edges are set. Let it cool in the oven with the door ajar.
  5. Cook the topping ingredients in a saucepan, then pour over the cooled cheesecake. Chill in the refrigerator for at least four hours before serving.
