Description
A hearty and comforting dish made with seasoned ground meat topped with creamy mashed potatoes, perfect for a busy weeknight or a cozy family dinner.
Ingredients
Scale
- 1 pound of ground beef or lamb
- 1 cup of frozen mixed vegetables (peas, carrots, and corn)
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 2 tablespoons of tomato paste
- 1 cup of beef broth
- 4 cups of mashed potatoes (homemade or store-bought)
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 400°F (200°C).
- Cook the ground meat by heating a drizzle of olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing until soft and fragrant, about 3 minutes. Add in the ground meat, breaking it apart with a spatula, and brown well, seasoning with salt and pepper.
- Add the tomato paste and mix for a minute. Pour in the beef broth and add the frozen vegetables. Let it simmer for about 5-10 minutes until slightly thickened.
- Assemble the pie in a baking dish by layering the meat and veggie mixture evenly, then topping with mashed potatoes, smoothing over the filling.
- Bake in the preheated oven for about 25-30 minutes until the potatoes are golden brown.
- Cool for a few minutes before serving, and enjoy with a fresh salad or crusty bread!
Notes
Leftover mashed potatoes can be used in this recipe. For a vegetarian option, replace the meat with lentils or plant-based ground meat.
