  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare the potatoes: In a large bowl, combine the halved baby potatoes with olive oil, minced garlic, rosemary, thyme, salt, and pepper. Toss everything together until the potatoes are well-coated.
  2. Load the slow cooker: Transfer the seasoned potatoes into the slow cooker, covering them evenly.
  3. Set and forget: Cover the slow cooker and set it on low for 240-300 minutes or high for 120-180 minutes.
