- 1 pre-made pie crust
- 1 cup ricotta cheese
- 2 cups fresh spinach
- 3 large eggs
- 1/2 cup grated Parmesan cheese
- 1/4 cup milk
- Salt and pepper to taste
- A dash of nutmeg (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the crust by laying it in a 9-inch pie dish and poking the bottom with a fork.
- Sauté the spinach in a pan over medium heat until wilted, about 3-4 minutes.
- Mix the ricotta, eggs, Parmesan, milk, salt, pepper, and nutmeg in a large bowl.
- Combine the sautéed spinach with the filling mixture.
- Pour the mixture into the crust, spreading it out evenly.
- Bake for about 30-35 minutes until set and golden on top.
- Cool for 10 minutes before slicing and serving.
Notes
Leftovers can be kept in the fridge for up to three days. You can also swap the spinach for other vegetables like asparagus or mushrooms.
