These quirky Eye Meatballs are a fun twist on the classic meatball recipe, perfect for impressing family and friends with a little whimsy at the dinner table.

- 1 lb ground beef (or your favorite ground meat)
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1 tablespoon garlic powder
- 1 teaspoon onion powder
- 1 egg
- Salt and pepper to taste
- Olives (for the eyes)
- Marinara sauce (for serving)
Instructions
- Preheat your oven to 375°F (190°C).
- Mix together the ground beef, breadcrumbs, Parmesan cheese, chopped parsley, garlic powder, onion powder, egg, salt, and pepper in a large bowl.
- Roll the mixture into meatballs about the size of golf balls.
- Press a small olive into each meatball to create the “eye.”
- Place the meatballs on a baking sheet lined with parchment paper and bake for about 25 minutes until cooked through and golden brown.
- Warm up some marinara sauce on the stovetop and serve your Eye Meatballs with a generous drizzle of sauce on top.
Notes
For variations, you can use ground turkey, chicken, or meat alternatives. If you’re not a fan of olives, small pieces of mozzarella cheese work too.
