Description

These quirky Eye Meatballs are a fun twist on the classic meatball recipe, perfect for impressing family and friends with a little whimsy at the dinner table.


Ingredients

  • 1 lb ground beef (or your favorite ground meat)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1 egg
  • Salt and pepper to taste
  • Olives (for the eyes)
  • Marinara sauce (for serving)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix together the ground beef, breadcrumbs, Parmesan cheese, chopped parsley, garlic powder, onion powder, egg, salt, and pepper in a large bowl.
  3. Roll the mixture into meatballs about the size of golf balls.
  4. Press a small olive into each meatball to create the “eye.”
  5. Place the meatballs on a baking sheet lined with parchment paper and bake for about 25 minutes until cooked through and golden brown.
  6. Warm up some marinara sauce on the stovetop and serve your Eye Meatballs with a generous drizzle of sauce on top.

Notes

For variations, you can use ground turkey, chicken, or meat alternatives. If you’re not a fan of olives, small pieces of mozzarella cheese work too.
