  • 8 ounces lo mein or spaghetti noodles (raw)
  • 1 pound boneless, skinless chicken breasts, sliced thinly
  • 2 cups mixed stir-fry veggies (like bell peppers, broccoli, and carrots)
  • 4 cloves garlic, minced
  • ¼ cup low-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon fresh ginger, minced (optional)
  • Green onions & sesame seeds for garnish

Instructions

  1. Cook the lo mein noodles according to package instructions, drain, and set aside.
  2. Heat a little oil in a large skillet over medium-high heat and sauté the sliced chicken until browned and cooked through, about 5-7 minutes.
  3. Add the minced garlic (and ginger, if using) and sauté for just a minute more.
  4. Stir-fry the mixed veggies for about 3-4 minutes until bright and tender-crisp.
  5. Toss in the cooked noodles, soy sauce, and oyster sauce, mixing everything together until well combined and heated through.
