- 2 large chicken breasts, flattened
- 1 cup all-purpose flour
- 2 large eggs
- 2 cups breadcrumbs
- Salt and pepper, to taste
- ½ cup oil, for frying
- 8 oz. mushrooms, sliced
- 1 cup heavy cream
- 1 teaspoon garlic powder
- Fresh parsley, for garnish
Instructions
- Prepare the chicken by flattening to about 1/2 inch thickness.
- Set up your three bowls: one for flour (seasoned with salt and pepper), one for beaten eggs, and one for breadcrumbs.
- Coat each chicken breast in flour, then dip into eggs, and then coat with breadcrumbs.
- Fry the schnitzel in heated oil for 3-4 minutes on each side until golden brown and crispy.
- Make the creamy mushroom sauce in the same skillet by sautéing mushrooms, then adding cream and garlic powder.
- Serve by placing schnitzel on a plate, drizzling with sauce, and garnishing with parsley.
Notes
Do not overcrowd the pan when frying. Leftovers can be reheated in the oven for best results.
