Crispy chicken schnitzel topped with a rich and creamy mushroom sauce, perfect for busy weeknights and impressive enough for guests.


Ingredients

  • 2 large chicken breasts, flattened
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 cups breadcrumbs
  • Salt and pepper, to taste
  • ½ cup oil, for frying
  • 8 oz. mushrooms, sliced
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • Fresh parsley, for garnish

Instructions

  1. Prepare the chicken by flattening to about 1/2 inch thickness.
  2. Set up your three bowls: one for flour (seasoned with salt and pepper), one for beaten eggs, and one for breadcrumbs.
  3. Coat each chicken breast in flour, then dip into eggs, and then coat with breadcrumbs.
  4. Fry the schnitzel in heated oil for 3-4 minutes on each side until golden brown and crispy.
  5. Make the creamy mushroom sauce in the same skillet by sautéing mushrooms, then adding cream and garlic powder.
  6. Serve by placing schnitzel on a plate, drizzling with sauce, and garnishing with parsley.

Notes

Do not overcrowd the pan when frying. Leftovers can be reheated in the oven for best results.
