- 1 pound scallops
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- Juice of 1 lemon
- Fresh parsley, chopped (for garnish)
- 1 cup polenta
- 4 cups water or chicken broth
- 1 cup grated Parmesan cheese
- 2 tablespoons unsalted butter
- Salt, to taste
Instructions
- Cook the polenta: In a medium saucepan, bring 4 cups of water or chicken broth to a boil. Slowly whisk in 1 cup of polenta, stirring constantly to avoid lumps. Reduce the heat and let it simmer for about 20-30 minutes until creamy, stirring occasionally.
- Add the cheese: Once the polenta is cooked, stir in the grated Parmesan and 2 tablespoons of butter. Season with salt to taste. Keep it warm while you cook the scallops.
- Prepare the scallops: While the polenta is cooking, pat the scallops dry with paper towels. Season with salt and pepper.
- Cook the scallops: In a large skillet over medium-high heat, add olive oil and 1 tablespoon of butter. Once hot, add the scallops and cook for about 2-3 minutes on each side or until they’re golden brown and opaque in the middle. Remove from heat and squeeze some fresh lemon juice over them.
- Plate it up: On each plate, scoop a generous serving of the silky Parmesan polenta, then top with the beautifully seared scallops. Drizzle the pan juices from the scallops over the top and garnish with fresh parsley.
Notes
For extra creamy polenta, stir in a splash of cream after adding the cheese. You can substitute scallops with shrimp or chicken if desired.
