  • 1 cup of water
  • 1/2 cup of vegetable oil
  • 3 large eggs
  • 1 can (14 oz) sweetened condensed milk
  • 1 jar (8 oz) lemon curd
  • 1 cup of heavy whipping cream
  • 1/4 cup of powdered sugar
  • Zest of one lemon (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking dish.
  2. In a large bowl, mix the lemon cake mix, water, vegetable oil, and eggs until well combined. Pour the batter into the prepared baking dish and bake for about 30 minutes or until a toothpick inserted in the center comes out clean. Let it cool completely.
  3. Once cooled, poke holes all over the surface of the cake using a fork.
  4. In a mixing bowl, combine the sweetened condensed milk with the lemon curd. Gently pour this mixture over the cake, ensuring it seeps into the holes for that extra zing.
  5. In another bowl, whip the heavy cream and powdered sugar until soft peaks form. Spread this luscious whipped cream over the top of the cake.
  6. Refrigerate the cake for at least an hour, allowing the flavors to meld and the cake to set.
