Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1 cup granulated sugar (for caramel)
  • 6 tbsp unsalted butter (for caramel)
  • 1/2 cup heavy cream
  • 1/2 tsp sea salt (or more if desired)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Mix the melted butter, eggs, vanilla extract, and buttermilk until well blended.
  4. Gradually add the wet ingredients to the dry ingredients, stirring gently until no lumps remain.
  5. Pour the batter into lined muffin tins, filling each liner about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  7. While the cupcakes cool, make the salted caramel sauce by melting the sugar in a saucepan over medium heat.
  8. Add the butter and heavy cream, stirring until smooth and then mix in the sea salt.
  9. Once the cupcakes are cooled, make a small hole in the center of each and fill it with the caramel sauce, then drizzle more on top.
  10. Finish with a sprinkle of sea salt.

Notes

Don’t rush the caramel: Patience is key when making caramel. You can freeze the cupcakes without caramel and top them later for easy serving.
