- 1/2 cup pesto (store-bought or homemade)

Instructions
- Preheat your grill to medium-high heat. If you don’t have a grill, a stovetop grill pan will work just fine.
- Prepare the calamari: In a large bowl, drizzle the cleaned calamari rings with olive oil, and season with salt and pepper. Toss until they’re evenly coated.
- Grill the calamari: Place the seasoned calamari on the grill and cook for about 2-3 minutes on each side. They should be opaque and just firm to the touch—be careful not to overcook them, or they will become rubbery.
- Toss with pesto: Remove the calamari from the grill and place them back in the bowl. Add the pesto and toss gently to coat all the pieces.
- Serve hot: Transfer the calamari to a serving platter. Garnish with chopped parsley if you’re feeling fancy, and serve with lemon wedges for a zesty kick.
