Description
A quick and nutritious dinner option that won’t keep you cooking for hours. This grilled fish with steamed vegetables is light, healthy, and bursting with flavor.
Ingredients
- Fresh fish fillets (like salmon, tilapia, or cod)
- Olive oil
- Salt and pepper
- Lemon juice
- Mixed seasonal vegetables (broccoli, carrots, bell peppers)
- Fresh herbs (like parsley or dill for garnish)
Instructions
- Preheat your grill to medium-high heat, ensuring that it’s ready for the fish.
- Prepare the fish: Pat your fish fillets dry with a paper towel to remove any excess moisture. Rub each fillet with olive oil, salt, and pepper. Drizzle with lemon juice.
- Grill the fish: Place the fillets skin-side down on the grill grates. Grill for about 4-6 minutes on each side until it flakes easily with a fork.
- Steam the vegetables: Fill a pot with a couple of inches of water and place a steaming basket inside. Add mixed vegetables, cover, and steam for about 5-7 minutes until tender but still crisp.
- Serve it up: Place the grilled fish on a plate alongside the steamed vegetables and garnish with freshly chopped herbs.
Notes
Don’t overcook the fish; it should remain moist and flaky. Feel free to mix up your veggies, and consider adding salsa for extra flavor.
