  • 1 jalapeño, seeded and minced (optional)

  • 2 ears of sweet corn, husked and cleaned
  • 1 tablespoon butter

Instructions

  1. Marinate the prawns: In a bowl, combine the olive oil, minced garlic, paprika, lime juice, salt, and pepper. Add in the prawns, ensuring they’re well coated, and let them marinate for about 15-20 minutes.
  2. Prepare the mango salsa: In a mixing bowl, combine the diced mango, red onion, jalapeño, cilantro, and lime juice. Season with salt, mix gently.
  3. Roast the sweet corn: Preheat your grill or grill pan over medium-high heat. Brush the sweet corn with melted butter and sprinkle with salt and pepper. Wrap each ear in aluminum foil and grill for about 10-15 minutes, turning occasionally.
  4. Grill the prawns: Once the grill is hot, add the marinated prawns and cook for 2-3 minutes on each side, until they turn pink and opaque.
  5. Serve it up: Arrange the grilled prawns on a serving dish, top with mango salsa, and serve alongside roasted sweet corn.

Notes
