  • 4 large eggs
  • 2 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Mix together the flour, sugar, baking powder, baking soda, spices, and salt in a large mixing bowl.
  3. Add the vegetable oil and eggs in a separate bowl, then combine with the dry ingredients and fold in the carrots and pineapple.
  4. Bake for about 30-35 minutes or until a toothpick comes out clean.
  5. Whip the cream cheese and butter together, then gradually mix in the powdered sugar and vanilla to make the frosting.
  6. Spread the cream cheese frosting over the cooled cake, cut, and serve.

Notes

You can add crushed walnuts or shredded coconut for extra texture. Store any leftovers in an airtight container in the fridge.
