Ingredients

  • 1 pound beef chuck, cut into bite-sized pieces
  • 4 cups beef broth
  • 1 cup carrots, sliced
  • 1 cup celery, diced
  • 1 cup potatoes, diced
  • 1 cup green beans, trimmed and cut
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Olive oil for browning the beef

Instructions

  1. Brown the beef: In a large pot, heat a drizzle of olive oil over medium heat. Add the beef chunks and season with salt and pepper. Brown the meat on all sides.
  2. Sauté the vegetables: Add chopped onion and minced garlic to the pot. Sauté until the onion becomes translucent, about 5 minutes.
  3. Combine ingredients: Stir in the carrots, celery, potatoes, and green beans. Cook for another 5 minutes.
  4. Add the broth and simmer: Pour in the beef broth, diced tomatoes, tomato paste, thyme, and bay leaf. Bring to a simmer and cover, cooking for about 1 hour.
  5. Final touches: Taste and adjust seasoning if needed. Remove the bay leaf and serve piping hot.
