- 1 pound beef chuck, cut into bite-sized pieces
- 4 cups beef broth
- 1 cup carrots, sliced
- 1 cup celery, diced
- 1 cup potatoes, diced
- 1 cup green beans, trimmed and cut
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Olive oil for browning the beef
Instructions
- Brown the beef: In a large pot, heat a drizzle of olive oil over medium heat. Add the beef chunks and season with salt and pepper. Brown the meat on all sides.
- Sauté the vegetables: Add chopped onion and minced garlic to the pot. Sauté until the onion becomes translucent, about 5 minutes.
- Combine ingredients: Stir in the carrots, celery, potatoes, and green beans. Cook for another 5 minutes.
- Add the broth and simmer: Pour in the beef broth, diced tomatoes, tomato paste, thyme, and bay leaf. Bring to a simmer and cover, cooking for about 1 hour.
- Final touches: Taste and adjust seasoning if needed. Remove the bay leaf and serve piping hot.
