Ingredients

  • 4 medium potatoes, diced
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 onion, chopped
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Optional garnishes: green onions, crispy bacon, or more cheese

Instructions

  1. Brown the ground beef in a large pot over medium heat until browned and crumbly.
  2. Add the chopped onion, carrots, and celery. Sauté for about 5 minutes until softened.
  3. Add the diced potatoes and beef broth. Bring to a boil, then reduce heat and let simmer until potatoes are fork-tender, about 15-20 minutes.
  4. Stir in the heavy cream and simmer for an additional 5 minutes.
  5. Fold in the shredded cheddar cheese until melted. Season with salt and pepper to taste.
  6. Serve in bowls garnished with green onions, crispy bacon, or extra cheese, if desired.

Notes

This soup can be made a day ahead and stored in the refrigerator. It tastes even better the next day! Feel free to substitute ground beef with turkey or lentils for a vegetarian version.
