- 4 medium potatoes, diced
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 onion, chopped
- 4 cups beef broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Optional garnishes: green onions, crispy bacon, or more cheese
Instructions
- Brown the ground beef in a large pot over medium heat until browned and crumbly.
- Add the chopped onion, carrots, and celery. Sauté for about 5 minutes until softened.
- Add the diced potatoes and beef broth. Bring to a boil, then reduce heat and let simmer until potatoes are fork-tender, about 15-20 minutes.
- Stir in the heavy cream and simmer for an additional 5 minutes.
- Fold in the shredded cheddar cheese until melted. Season with salt and pepper to taste.
- Serve in bowls garnished with green onions, crispy bacon, or extra cheese, if desired.
Notes
This soup can be made a day ahead and stored in the refrigerator. It tastes even better the next day! Feel free to substitute ground beef with turkey or lentils for a vegetarian version.
