Heavenly Lemon Raspberry Meringue Cheesecake

Description

A creamy, zesty lemon cheesecake enveloped in fresh raspberries, topped with a perfect toasted meringue.


Ingredients

  • 1 cup crushed graham crackers
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup fresh raspberries
  • 3 large egg whites
  • 1/2 teaspoon cream of tartar
  • 3/4 cup sugar

Instructions

  1. Preheat your oven to 325°F (165°C). Combine crushed graham crackers, sugar, and melted butter in a bowl until mixed well. Press this mixture into the bottom of a 9-inch springform pan. Bake for about 10 minutes or until golden. Let it cool and then switch your oven to 350°F (175°C).
  2. Grab a mixing bowl and beat the softened cream cheese until it’s creamy, then gradually add the 1/2 cup sugar. Toss in the eggs one at a time, mixing after each, followed by that vibrant lemon juice and zest. Finally, gently fold in your fresh raspberries.
  3. Pour that luscious mixture over your cooled crust and bake for about 40-45 minutes, or until the filling is set in the middle.
  4. Once your cheesecake is out, let it cool down to room temperature. While it’s cooling, whisk the egg whites until frothy. Add in the cream of tartar and gradually sprinkle in the 3/4 cup sugar. Continue to whip until you form stiff peaks.
  5. Spread the meringue over your cooled cheesecake and create peaks. Pop it back into the oven for about 10-15 minutes or until the meringue is golden brown.
  6. Let your cheesecake cool completely, then refrigerate for at least 4 hours (or overnight if you can wait!).

Notes

Use room temperature ingredients for a smoother mix. Frozen raspberries can also be used. Consider adding whipped cream on top for extra richness.
