Ingredients

  • 1 cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup buttermilk (or regular milk with a splash of vinegar)
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup finely chopped pistachios
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • ½ cup heavy cream
  • 1 tsp vanilla extract
  • A pinch of salt
  • Additional crushed pistachios for decoration

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans and set them aside.
  2. Mix together the flour, sugar, baking powder, baking soda, and salt until well combined.
  3. Combine the buttermilk, vegetable oil, eggs, and vanilla extract in another bowl. Mix well.
  4. Add the wet ingredients to the dry ingredients and gently fold them together until just combined.
  5. Fold in the finely chopped pistachios until evenly distributed.
  6. Pour the batter into the prepared pans and bake for 25-30 minutes until a toothpick comes out clean.
  7. Cool the cakes in the pans for about 10 minutes before transferring to a wire rack.
  8. Beat the softened butter until creamy, then gradually add powdered sugar, followed by heavy cream, vanilla extract, and salt, mixing until fluffy.
  9. Assemble by spreading frosting on top of one cake layer, adding the second layer, and frosting the top and sides.
  10. Garnish with crushed pistachios for decoration.

Notes

This cake stays moist for up to three days in an airtight container. For a nutty twist, walnuts or almonds can substitute for pistachios.
