- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 3 tablespoons poppy seeds
- 1/2 cup unsalted butter, softened
- 1 cup buttermilk
- 3 large eggs
- Zest of 2 lemons
- 1/4 cup fresh lemon juice
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan, or line it with parchment paper.
- Mix together the flour, sugar, baking powder, salt, and poppy seeds in a large bowl.
- Cream the softened butter until it’s light and fluffy. Gradually add in the sugar, beating until smooth.
- Add in the eggs, one at a time, then stir in the buttermilk, lemon zest, and lemon juice.
- Combine the dry and wet ingredients, stirring until just combined.
- Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
- Cool in the pan for 15 minutes before transferring to a wire rack.
Notes
For an extra pop, try drizzling a simple lemon glaze on top! This cake is delightful served cold.
