Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons poppy seeds
  • 1/2 cup unsalted butter, softened
  • 1 cup buttermilk
  • 3 large eggs
  • Zest of 2 lemons
  • 1/4 cup fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan, or line it with parchment paper.
  2. Mix together the flour, sugar, baking powder, salt, and poppy seeds in a large bowl.
  3. Cream the softened butter until it’s light and fluffy. Gradually add in the sugar, beating until smooth.
  4. Add in the eggs, one at a time, then stir in the buttermilk, lemon zest, and lemon juice.
  5. Combine the dry and wet ingredients, stirring until just combined.
  6. Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  7. Cool in the pan for 15 minutes before transferring to a wire rack.

Notes

For an extra pop, try drizzling a simple lemon glaze on top! This cake is delightful served cold.
