Description

A delightful cheesecake combining tangy lemon and sweet strawberries, perfect for summer gatherings.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ⅓ cup sugar
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • Zest and juice of 2 lemons
  • 1 ½ cups fresh strawberries, hulled and sliced
  • Whipped cream and extra strawberries for garnish (optional)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix graham cracker crumbs, sugar, and melted butter into a bowl.
  3. Press the mixture into the bottom of a 9-inch springform pan.
  4. Beat the softened cream cheese and sugar until smooth and creamy.
  5. Add in the eggs one at a time, mixing well after each addition.
  6. Stir in the vanilla extract, lemon zest, and lemon juice until well combined.
  7. Fold in the sliced strawberries gently.
  8. Pour the filling into your crust.
  9. Bake for 50-60 minutes until the center is set but a little jiggly.
  10. Cool at room temperature and refrigerate for at least 4 hours.
  11. Serve sliced and topped with whipped cream and fresh strawberries.

Notes

Use room temperature ingredients for better blending. Experiment with different fruits if desired.
