- 1 ½ cups graham cracker crumbs
- ⅓ cup sugar
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- Zest and juice of 2 lemons
- 1 ½ cups fresh strawberries, hulled and sliced
- Whipped cream and extra strawberries for garnish (optional)
Instructions
- Preheat your oven to 325°F (160°C).
- Mix graham cracker crumbs, sugar, and melted butter into a bowl.
- Press the mixture into the bottom of a 9-inch springform pan.
- Beat the softened cream cheese and sugar until smooth and creamy.
- Add in the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract, lemon zest, and lemon juice until well combined.
- Fold in the sliced strawberries gently.
- Pour the filling into your crust.
- Bake for 50-60 minutes until the center is set but a little jiggly.
- Cool at room temperature and refrigerate for at least 4 hours.
- Serve sliced and topped with whipped cream and fresh strawberries.
Notes
Use room temperature ingredients for better blending. Experiment with different fruits if desired.
