  • 12 ounces of pasta (your choice)
  • 1 pound of Italian sausage, removed from casings
  • 2 cups of fresh spinach
  • 1 cup of mushrooms, sliced
  • 1 can (14 ounces) of diced tomatoes
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Parmesan cheese for garnish

Instructions

  1. Cook the Pasta: Begin by boiling a large pot of salted water. Add your pasta and cook according to the package instructions. Make sure to reserve a cup of pasta water before draining!
  2. Brown the Sausage: In a large skillet, heat a drizzle of olive oil over medium heat. Add the Italian sausage, breaking it apart as it cooks. Sauté until it’s browned and cooked through (about 5-7 minutes).
  3. Add Vegetables: Toss in the sliced mushrooms and garlic, sautéing for another 2-3 minutes until the mushrooms become tender.
  4. Mix in Spinach: Now, fold in the fresh spinach until it wilts, which just takes a minute. Then, add the can of diced tomatoes (don’t forget the juice!) and let everything simmer together for about 5 more minutes.
  5. Combine with Pasta: Have your drained pasta ready? Gently fold it into the skillet with the sausage and tomato sauce. Add some reserved pasta water a little at a time until you reach your desired consistency. Season with salt and pepper to taste.
  6. Serve and Enjoy: Serve your delicious Italian sausage pasta hot, topped with freshly grated Parmesan cheese. Dinner is ready!

Notes

Feel free to use store-bought or pre-cooked sausage to speed up the cooking process. Experiment with other vegetables or spices for added flavor.
