  • 1 cup buttermilk

  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tablespoons lime juice
  • Additional lime zest for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line them with parchment paper.
  2. Cream together the softened butter and granulated sugar until fluffy (about 2-3 minutes). Add the eggs one at a time, beating well after each addition.
  3. Stir in the lime zest and lime juice.
  4. Whisk together the flour, baking powder, baking soda, and salt in another bowl. Gradually add this dry mixture to the butter mixture, alternating with the buttermilk. Start and end with the flour mix. Mix just until combined.
  5. Divide the batter evenly between the prepared pans and smooth the tops. Bake for about 25-30 minutes or until a toothpick comes out clean. Cool in the pans for 10 minutes before transferring to wire racks.
  6. Beat together the softened cream cheese and butter for the frosting until smooth. Gradually mix in the powdered sugar and lime juice. Once the cakes are completely cool, spread a layer of frosting on one cake layer, place the second layer on top, and frost the entire cake. Top with extra lime zest if desired.

Notes
