- 1 cup crushed graham crackers
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2/3 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1 and 1/2 cups water
- 3 large egg yolks, lightly beaten
- 1/2 cup fresh lemon juice (about 2–3 lemons)
- 2 tablespoons unsalted butter
- Zest of 2 lemons
- 3 large egg whites
- 1/4 teaspoon cream of tartar
- 1/2 cup granulated sugar
Instructions
- Preheat your oven to 350°F (175°C). In a mixing bowl, combine the crushed graham crackers, sugar, and melted butter. Mix until the crumbs resemble wet sand. Press a tablespoon of the mixture into the bottom of a mini muffin tin to form the crust. Bake for 8-10 minutes until golden and set. Let them cool while you prepare the lemon filling.
- In a medium saucepan, whisk together the sugar, cornstarch, and salt. Gradually add the water while stirring to combine. Heat over medium heat until it starts to thicken (about 5-7 minutes). Stir in a small amount of the hot mixture into the egg yolks to temper them, then add the egg mixture back into the saucepan. Stir in the lemon juice, zest, and butter. Continue cooking until thickened, about 2-3 more minutes. Remove from heat and let it cool slightly.
- Pour the lemon filling into your cooled crusts, filling them up to the top.
- In a clean bowl, beat the egg whites with cream of tartar until soft peaks form. Gradually add the sugar, continuing to beat until you reach stiff, glossy peaks.
- Spoon or pipe the meringue over the filled lemon bites, ensuring they are fully covered. Swirl and create peaks for that signature meringue look.
- Return the muffin tin to the oven and bake at 350°F (175°C) for 10-12 minutes, or until the meringue is lightly golden.
- Let them cool in the tin for a bit, then transfer to a cooling rack. You can serve them warm or let them chill in the fridge for later.
