- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tablespoons sugar
- 16 oz cream cheese, softened
- ½ cup sugar
- 2 large eggs
- 1 cup sour cream
- ¼ cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 cup fresh raspberries (and a few extra for garnish)
Instructions
- Prepare the crust: Preheat your oven to 350°F (175°C). In a bowl, mix the graham cracker crumbs, melted butter, and sugar until combined. Press this mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let cool.
- Make the filling: In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy. Add the eggs one at a time, beating well after each addition. Stir in the sour cream, lemon juice, and lemon zest until fully incorporated.
- Add the raspberries: Gently fold in the fresh raspberries, taking care not to mash them too much (those beautiful red gems deserve to shine).
- Bake the cheesecake: Pour the filling into the cooled crust and smooth the top. Bake for 50-60 minutes or until the center is set but slightly jiggly.
- Cool: Once baked, turn off the oven and crack the door open, letting the cheesecake cool in the oven for about an hour. Then, refrigerate for at least 4 hours (or overnight, if you can wait).
- Serve: Before serving, garnish with extra raspberries and a dusting of powdered sugar if you’re feeling fancy!
Notes
Don’t have fresh raspberries? Frozen ones work wonderfully, just thaw them beforehand. You can also drizzle lemon glaze over the cheesecake for an extra layer of flavor.
