- 1 lb shrimp, peeled and deveined
- 1 cup scallops, chopped
- 1 cup mussels, cleaned
- 1 can (28 oz) crushed tomatoes
- 3 cloves garlic, minced
- 1 onion, diced
- 1/4 cup olive oil
- Salt and pepper to taste
- Fresh basil, for garnish
Instructions
- Cook the pasta: Begin by bringing a large pot of salted water to a boil. Add your linguine and cook according to the package directions until al dente, usually around 8-10 minutes. Drain and set aside. Pro tip: Reserve a cup of the pasta water for later!
- Sauté the aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Then toss in the minced garlic, and cook for an additional minute until fragrant.
- Add the tomatoes: Pour in the crushed tomatoes and bring to a simmer. Season the sauce with salt and pepper, letting it cook for about 10 minutes to meld the flavors. If you want to turn up the flavor even more, try adding a pinch of red pepper flakes for some heat!
- Incorporate the seafood: Introduce the shrimp, scallops, and mussels to the sauce. Cook for an additional 5-7 minutes, or until the seafood is cooked through. If the sauce becomes too thick, don’t be shy to add in some of that reserved pasta water.
- Combine and serve: Once your seafood is perfectly cooked, add the linguine to the skillet and toss everything together until well combined. Serve hot, garnished with fresh basil for a burst of brightness.
